Pasta ‘ru malutempu

Ingredients for 4 people:

  • 450 gr. of “gnocchetti” of “Penne” of durum wheat semolina
  • 3 salted anchovies
  • 3 sparaciddato broccoli
  • 3 garlic cloves
  • 150 gr. of black olives
  • a glass of white wine
  • 80 gr.  of breadcrumbs
  • 30 cl Extra Virgin Olive Oil
  • Salt to taste
  • parsley
  • chili pepper
Historical Origin of the Dish:

This is a dish in which the main ingredient is the imagination; cooked in Syracuse when the sea was too rough to fish pasta ru malutempo (pasta from bad weather) is a first course with fish sauce … without fish (or at least not fresh fish, but at most salt anchovies). Ingredients for 4 pople:

  • 1 kg of sardines newborn
  • 4 eggs
  • 80 g  of flour 00
  • a bunch of parsley
  • 1 l fry oil
Historical Origin of the Dish:

In Sicily the word “Maccu” often refers to the famous cream of dried broad beans, which in the past represented one of the main sources of livelihood for the peasant population. Eith this dish, instead, we go from the land to the sea. To tell the truth, the word “muccu” that indicates this fish has a strong similarity with the mucus of the nose, hence the famous “Muccaturi”.
